When Ortega was 17, he met boxing instructor James Luhrsen, who took him in and taught him striking techniques. He started his career in Southern California, competing for regional promotions. In a five-round fight, he won his first pro-MMA championship by unanimous decision over Carlos Garces, becoming the featherweight champion of Respect In The Cage.

Ortega had an unbeaten record of 8–0 before signing with the UFC in April 2014. He credited James Luhrsen and Rener Gracie with helping him achieve his goal. He was set to make his promotional debut against Diego Brando at The Ultimate Fighter Brazil 3 Finale on May 31, 2014. However, Brandao withdrew from the fight in the days leading up to it, citing an injury.

Due to the lateness of the change, officials did not attempt to find a replacement, and Ortega was also removed from the roster. Ortega finally made his UFC debut on July 26, 2014, against Mike De La Torre at UFC on Fox 12.

Originally a first-round submission (rear-naked choke) victory for Ortega, the result was changed to “No Contest” after he tested positive for drostanolone during a post-fight drug test. He was fined $2,500 and suspended for nine months as a result of his actions.

On March 27, 2021, Ortega was scheduled to face current UFC Featherweight Champion Alexander Volkanovski in a UFC Featherweight Championship fight at UFC 260. The fight, however, was canceled due to COVID-19 protocols. On April 2, 2021, it was announced that Alexander Volkanovski and Ortega will serve as coaches for The Ultimate Fighter 29 on ESPN+, which will feature bantamweight and middleweight contestants.

On September 25, 2021, Ortega fought Alexander Volkanovski for the UFC Featherweight Championship at UFC 266. He was defeated by a unanimous decision. He won the Fight of the Night award for this fight.
