Paul  Sr. started building custom bikes for fun after being inspired by the many custom bikes he saw on the streets and in movies. He left in 1999 to start Orange County Choppers. He hired his son Paul Jr. and began selling bikes.

The series was canceled on its sixth series in February 2010. A spin-off of the series Orange County Choppers which aired between August 18, 2013, and January 11, 2014. It only featured Senior and his team as they build some of the most complicated choppers.
